Cheesy Honey Chicken
- 4 -6 boneless skinless chicken breasts, pounded but not too thin
- 1 large sweet onion, choped
- 2 tablespoons olive oil
- 1 tablespoon butter
- 2 cups shredded cheddar cheese
- 14 cup honey
- 14 cup yellow mustard
- salt and pepper
- Clean chicken breasts, place in a sealable plastic bag or container.
- Pour bottle of marinade over chiken and let chill for 1-2 hours, or overnight if you choose.
- Heat up the grill or grill pan to medium-high to start.
- After the first side of the chicken is browned, flip it and turn the girll to medium.
- Preheat a large pan for onions over medium high heat, add olive oil and butter to onion pan.
- Add to hot pan, add salt and pepper and cook onions until slightly browned 8-10 minutes.
- When chicken is almost done pile onions and cheese on top of each piece of chicken, making sure to portion so there will be enough for each piece.
- Close grill lid or make a foil lid for your grill pan to allow the cheese to melt for 2-4 minutes.
- Remove and place on serving tray.
- Combine honey and mustard, drizzle over chicken breasts, leaving some for dipping.
- Serve!
