Spicy Thai Chicken Curry
- 2 tbsp Hot curry powder
- 1/2 tbsp turmeric
- 1 tbsp lemongrass finely minced
- 4 thai chillies (minced)
- 3 clove garlic (minced)
- 1 chunk of ginger (minced)
- 1 onion coarsely chopped
- 1 large chicken breast (cubed)
- 3 Red potatoes (cubed)
- 1 Green bell pepper, coarsely chopped
- 2 cup coconut milk
- 2 tbsp ghee or oil
- In hot pan, add ghee (oil) and curry powder and turmeric until a paste.
- Add in your chillies, lemongrass, garlic and ginger.
- Stir fry for 20 seconds.
- Add in onions and green peppers and stir fry for 1 minute.
- Add in chicken and potatoes and stir fry for 3 minutes.
- Add in your coconut milk and bring to a boil.
- Cover and simmer for 30 minutes
- Serve over noodles or a bed of rice.
