Spicy Thai Chicken Curry

  1. In hot pan, add ghee (oil) and curry powder and turmeric until a paste.
  2. Add in your chillies, lemongrass, garlic and ginger.
  3. Stir fry for 20 seconds.
  4. Add in onions and green peppers and stir fry for 1 minute.
  5. Add in chicken and potatoes and stir fry for 3 minutes.
  6. Add in your coconut milk and bring to a boil.
  7. Cover and simmer for 30 minutes
  8. Serve over noodles or a bed of rice.
