Meatloaf, the Way I Remember It.
- 1 large onion, minced
- 2 garlic cloves, finely chopped
- 2 tablespoons olive oil
- 1 lb ground pork (lean)
- 1 lb ground beef (87 -90% lean)
- 1 34 cups breadcrumbs, unflavored
- 2 large eggs
- 12 cup 1% low-fat milk
- 1 teaspoon salt
- 34 teaspoon cracked black pepper
- 4 tablespoons ketchup
- 2 tablespoons dark brown sugar
- 4 tablespoons cider vinegar
- 4 tablespoons ketchup
- In a small skillet, heat olive oil to saute onions until slightly golden.
- Then add the garlic and continue to saute for 1 to 2 minutes longer.
- Cool slightly.
- In a bowl combine the milk, eggs, salt, pepper, and ketchup mix well.
- Add the bread crumbs, mix, Add the beef, pork, and onions mix well (hands work best).
- Place into a loaf baking dish removing any air pockets.
- In a small bowl mix the glaze ingredients and pour over the meatloaf.
- Bake in a 350 degree oven for 60 to 75 minutes.
- Remove when internal temperature is 155 degrees.
- Let stand 15 minutes prior to serving.
