Amanda's Favorite Minty Watermelon Salad

  1. Chunk watermelon, hull and half strawberries and half grapes.
  2. For syrup: In small saucepan combine sugar, water, mint and ginger.
  3. Bring to boil; reduce heat and simmer 5 minutes to thicken slightly.
  4. Set aside to cool.
  5. Put all the fruit in a large bowl and add syrup mixture.
  6. Toss to coat.
  7. Garnish with mint leaves and serve immediately.
