Heathers Vegetable Soup
- 1 medium potato
- 1 medium kumera
- 1 medium parsnip
- 1 medium carrot
- 1 small leek
- 5 cup vegetable stock
- 2 pinch salt
- 4 pinch ground black pepper
- pour stock into a large sauce pan and turn on heat to bring to boil
- peel and wash all the vegetables except leek.
- chop vegetables into even sized cubes
- add diced vegetables to the stock.
- simmer gently for around 8 minutes.
- wash and trim leek.
- slice into rounds and then cut half way through the diameter of each round so that when they cook you end up with strips.
- add leek to pot after the 8 minutes are up.
- simmer for a further 5 to 10 minutes depending on the size of your diced veg.
- serve in a bowl with extra salt and pepper and buttered crusty rolls or bread
