Pesto Personal Pizzas
- 4 tablespoons olive oil, divided
- 12 cup red onion, thinly sliced
- 1 garlic clove, minced
- 1 lb ground turkey
- 6 whole wheat pita bread
- 1 tablespoon coarse salt
- 1 tablespoon dried oregano
- 6 tablespoons pesto sauce
- 14 cup pine nuts, toasted
- 1 cup asiago cheese
- Preheat oven to 400F.
- In a large skillet on medium-high, heat 2 tablespoons olive oil.
- Add onions and saute for 5 minutes.
- Add garlic and saute for 2 minutes more.
- Add ground turkey and saute until completely cooked and starting to brown, about 10 minutes.
- Remove from heat and set aside.
- Brush each pita with remaining olive oil.
- Season each pita with salt and oregano.
- Spread pita with 1 tablespoons of the pesto.
- Divide turkey mixture evenly among the 6 pitas.
- Repeat with pine nuts and chees.
- Transfer pizzas to a baking sheet and bake for 10 minutes or until cheese is melted and golden.
