Apricot Or Peach Marmalade Recipe

  1. In a nonreactive saucepan, combine apricots, sugar, lemon juice, brandy, orange zest, and salt.
  2. Over medium heat, cook till the fruit begins to give up its juices.
  3. Lower heat and simmer till fruit is tender and mix thickens, about 1 hour.
  4. Correct flavor to taste, adding a little more sugar as necessary.
  5. Makes about 4 1/2 c..
