Mayonnaise With Fresh Herbs
- 1 large egg yolk
- 1 tablespoon Dijon mustard
- 1 tablespoon white-wine vinegar
- Salt and freshly ground white pepper to taste
- 1 cup vegetable or olive oil
- 2 tablespoon minced scallions
- 2 tablespoons minced fresh chives
- 2 tablespoons minced parsley
- 2 tablespoons minced fresh basil
- 1 tablespoon minced fresh tarragon or any fresh herb of your choice
- 1/2 teaspoon chopped garlic
- Combine the egg yolk, mustard, vinegar, salt and pepper in a mixing bowl.
- Add the oil in a thin stream while beating vigorously with a wire whisk.
- When the mixture is thick and smooth, stir in the scallions, chives, parsley, basil, tarragon and garlic and blend well.
