Mayonnaise With Fresh Herbs

  1. Combine the egg yolk, mustard, vinegar, salt and pepper in a mixing bowl.
  2. Add the oil in a thin stream while beating vigorously with a wire whisk.
  3. When the mixture is thick and smooth, stir in the scallions, chives, parsley, basil, tarragon and garlic and blend well.
