Quick and Easy Citrus Buttercake
- 12 cup butter or 12 cup margarine
- 2 eggs
- 1 cup self raising flour
- 12 cup plain flour
- 1 teaspoon grated lemon rind
- 1 teaspoon grated orange rind
- 13 cup orange juice
- Preheat oven to 190 degrees.
- Grease a 20cm ring tin.
- Place all ingredients into a small mixer bowl.
- Mix on low speed until ingredients are blended together.
- Beat on medium speed for 2 minutes.
- Spoon batter into a greased ring tin.
- Bake in preheated 190 degree oven for 35 - 40 minutes.
- Cool slightly in tin then iturn out onto wire rack.
- When cold.
- dust with icing sugar and serve buttered if desired.
