Asparagus Pasta Salad Recipe
- 3 ounce Dry angel hair pasta
- 1 lb Asparagus, cut diagonally into 2 inch pcs, (I got 10 ounces after breaking off the tough lower stalks)
- 3 ounce Red onion, sliced and quartered, (about 1/2 c.)
- 6 x Canned artichoke hearts, quartered
- 1 c. Unsweetened frzn blackberries, thawed
- 3 Tbsp. Raspberry vinegar
- 2 x Sweet n'Low packets, (or possibly 1 Tbsp. sugar if you prefer)
- 1 tsp Salt
- 1 tsp Fat free Italian dressing Couple twists of grnd pepper
- Break pasta into one to one and one-half inch pcs.
- Cook in boiling water for about 5 min or possibly till done the way you like them.
- Rinse with cool water and set aside.
- Place onions and asparagus in steamer and steam about 6 min.
- Rinse with cool water and drain well.
- Stir asparagus and onions into the pasta and add in the rest of the ingredients.
- Refrigeratewell.
- This makes approximately 4 c.. One c.
