Pasta with Sausage & Broccoli Rabe

  1. Bring a large pot of salted water to a boil.
  2. Fill a large bowl with ice and cold water.
  3. Add broccoli rabe to boiling water, and blanch for one minute.
  4. Remove with tongs, reserving water in the pot, and transfer to the ice water bath.
  5. When cool, remove broccoli rabe from the water and pat dry.
  6. Chop into 1-inch pieces.
  7. Bring water in the pot back to a boil, add in pasta and cook until al dente.
  8. Drain, reserving a cup of water.
  9. Warm oil in a large saute pan over medium-high heat.
  10. Add sausage to pan, breaking up as it cooks, and saute for 68 minutes or until well-browned.
  11. Reduce heat to medium.
  12. Add garlic and saute for 30 seconds.
  13. Stir in broccoli rabe, and season with salt and pepper.
  14. Toss in pasta, cheese and a splash of pasta water, or more as needed to bring the sauce together.
  15. Saute for 23 minutes or until mixture thickens.
  16. Taste and adjust seasoning, if needed.
  17. For serving, drizzle with oil and serve with cheese.
  18. Enjoy.
