Countdown Casserole
- 12 teaspoon olive oil
- 2 cups ground chicken breast, skinless, cooked
- 12 cup onion, chopped
- 12 cup bell pepper, chopped
- 3 cups frozen corn kernels, thawed
- 4 cups frozen hash browns, thawed
- 34 cup skim milk
- 12 teaspoon salt
- 14 teaspoon black pepper
- 12 cup fat-free cheddar cheese, grated
- Preheat oven to 375.
- Prepare a 2-quart casserole dish with cooking spray; set aside.
- In a skillet, heat oil over medium heat.
- Add chicken, onions, and bell peppers.
- Cook until chicken is longer pink and vegetables are tender.
- Stir in corn, hash browns, milk, salt, and black pepper.
- Bake, covered, for 30 minutes or until heated through.
- Top with cheddar cheese.
- Bake for three minutes more or until cheese has melted.
