Mixed Vegetable Salad with Maple, Soy Sauce and Mustard Vinaigrette
- 1/2 each green bell peppers thinly sliced
- 1/2 each sweet red bell peppers thinly sliced
- 1/4 each cucumbers peeled and cut into match sticks
- 1 small carrots peeled and cut into match sticks
- 1 small beets peeled and cut into match sticks
- 1 small turnip peeled and cut into match sticks
- 1/2 cup artichoke hearts marinated and well drained, if too big, cut into small chunks
- 2 each scallions, spring or green onions sliced
- 1/4 cup cilantro freshly chopped
- 1 cup cherry tomatoes halved
- 6 cups mixed salad greens well washed and drained
- Mix well all the salad ingredients except mixed greens with 2 tablespoons of vinaigrette, in a medium bowl, marinated for about 5 minutes.
- For assemble the salad:
- Divide mixed greens evenly and arrange onto serving plates.
- Divide marinated vegetable mixture evenly and place on top of each mixed greens.
- Drizzle the reserved dressing on top of the each salad.
- Serve.
