Mexican Bulgur Pilaf

  2. In large saucepan, bring 2 cups water to a boil.
  3. Stir in bulgur, and return to a boil.
  4. Reduce heat to low, cover and simmer gently until water is absorbed, about 15 minutes.

  6. Fluff bulgur with fork, then stir in beans, salsa, scallions, cilantro and cumin.
  7. Increase heat to medium-low and cook, uncovered, stirring occasionally, just until heated through, about 5 minutes.
  8. Serve hot.
