No-Bake Cheesecake with Berry Glaze
- 1-1/4 cups graham crumbs
- 1/4 cup butter, melted
- 2 cups strawberries, sliced, divided Safeway 1 lb For $3.99 thru 02/09
- 2 Tbsp. water
- 1 env. unflavoured gelatine
- 1/4 cup boiling water, divided
- 1 pkg. (250 g) Philadelphia Brick Cream Cheese, softened
- 1/3 cup sugar
- 1 cup whipping cream, whipped
- 1/2 cup raspberries
- 1 pkg. (85 g) Jell-O Raspberry Jelly Powder
- Mix baking crumbs and butter; press onto bottom of 9-inch springform pan.
- In small saucepan over medium heat, cook 1 cup strawberries with 2 Tbsp.
- water 3 to 5 min.
- or until soft; set aside.
- Sprinkle gelatine over boiling water in small bowl; allow to soften and become translucent.
- Beat cream cheese and sugar in large bowl with mixer until blended.
- Mix in cooked strawberries and gelatin.
- Gently fold in whipped cream.
- Pour over crust.
- Top with remaining strawberries and raspberries.
- Refrigerate 2 hours.
- Prepare jelly powder following the Quick-Set Method on package.
- Pour over cheesecake.
- Refrigerate 2 hours or overnight.
