Caramelized Fennel Gratin

  1. Heat oil in large skillet on medium heat.
  2. Add onions; cook 5 min., stirring occasionally.
  3. Add fennel; cover.
  4. Cook 5 min.
  5. ; stir.
  6. Cook, uncovered, 20 to 22 min.
  7. or until vegetables are tender and golden brown, stirring occasionally.
  8. Heat oven to 375 degrees F. Mix mayo and mustard in medium bowl; stir in cheese.
  9. Add to vegetable mixture; stir.
  10. Spoon into 9-inch pie plate sprayed with cooking spray.
  11. Mix cracker crumbs and butter; sprinkle over vegetable mixture.
  12. Bake 8 to 10 min.
  13. or until vegetable mixture is heated through and top is golden brown.
