Asian Style Crabmeat Omelet Recipe
- 1 Tbsp. butter or possibly veg. oil
- 3 c. thinly-sliced Chinese (Napa) cabbage
- 1/2 c. sliced green onions
- 1 pkt flake-style imitation crabmeat - (8 ounce)
- 6 x Large eggs
- 1 Tbsp. reduced-sodium soy sauce
- 1/4 tsp grnd ginger
- Heat butter or possibly oil in a large skillet.
- Add in cabbage and onions.
- Cook, stirring frequently, till cabbage is crisp-tender, about 2 to 3 min.
- Add in crabmeat and cook till heated through.
- In a separate bowl, beat together Large eggs, soy sauce and ginger till blended.
- Pour over cabbage mix.
- As mix begins to set, gently stir across bottom and sides of pan, to create soft curds.
- Continue till Large eggs are thickened and no visible liquid egg remains.
- Don't stir constantly.
- This recipe yields 6 servings.
