Apple Pie #2

  1. Crust: Combine flour, sugar and salt in bowl, cut in shortening using a pastry blender until all flour is blended into pea size chunks.
  2. Combine water, egg and vinegar, pour into flour mixture and mix lightly with a fork until dough forms a ball.
  3. This can also be done in the food processor, I find it easier that way.
  4. Take 3/4 of dough for bottom crust and flatten into a pancake size wrap in clear wrap and refrigerate, use the rest for tarts or something.
  5. While dough is chilling make filling.
  6. Filling: Combine brown sugar, sugar, 1 teaspoon cinnamon, cornstarch and nutmeg if using and cut in 1 tablespoon of Golden Crisco until crumbs form; toss apples with crumb mixture.
  7. Roll out pastry to fit 9 inch or 9 1/2 inch pie pan and pour apple mixture into it.
  8. Sprinkle apple juice over apples.
  9. Topping: Combine in food processor or by hand all topping ingredients and sprinkle over apples.
  10. Bake on bottom shelf of oven at 375F for 35-40 minutes, (I did mine for 40 minutes)
