Easy, Elegant Onion Tart

  2. Preheat oven to 425 degrees F.

  4. Heat oil in a skillet over medium-high heat.
  5. Add onion, thyme, salt, and pepper; cook 20 minutes, stirring occasionally.
  6. Its a lot of onions!
  7. Using a mandoline made slicing this many onions go very quickly.
  8. Otherwise, it might take you awhile.

  10. Roll dough out on a parchment paper-lined baking sheet.
  11. Sprinkle feta cheese in center of the dough, leaving a 1 1/2-inch border around the edges; top with the onions.

  13. Sprinkle with Swiss cheese.
  14. Fold piecrust border up and over onion mixture, pleating as you go, leaving a 6-inch-wide opening.
  15. Combine egg and 2 tablespoons water; brush over the exposed dough.
  16. Bake at 425 degrees F for 25 minutes or until golden.
  17. Cool for 10 minutes.
