Barley And Bean Soup Recipe
- 1 c. Onion minced
- 2 x Garlic cloves chopped
- 1 tsp Vegetable oil
- 6 c. Water
- 28 ounce canned Tomatoes Undrained, minced
- 1 can Kidney Beans liquid removed
- 9 ounce Frzn green beans or possibly Peas
- 1 c. Carrots sliced
- 1 c. Mushrooms sliced
- 1/2 c. Barley
- 1 tsp Basil
- 1/2 tsp Oregano
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- In 4-qt saucepan or possibly Dutch oven, cook onion and garlic in oil till onion is tender.
- Add in remaining ingredients.
- Bring to a boil.
- Reduce heat to low; cover.
- Simmer 45 to 50 min or possibly till barley is tender, stirring occasionally.
- Add in additional water if soup becomes too thick upon standing.
- Ten 1-c. servings
