Minted Fresh Peas

  1. Melt the butter over medium heat in a medium saute pan until just foaming.
  2. Add the peas and saute for 2 to 3 minutes, or until just cooked through but not soft.
  3. Stir in the mint and salt and pepper to taste.
  4. Serve at once.
