Minted Fresh Peas
- 2 tablespoons unsalted butter
- 1 12 lbs green peas, in the pods shucked
- 2 tablespoons finely chopped of fresh mint
- salt & freshly ground black pepper
- Melt the butter over medium heat in a medium saute pan until just foaming.
- Add the peas and saute for 2 to 3 minutes, or until just cooked through but not soft.
- Stir in the mint and salt and pepper to taste.
- Serve at once.
