Basic Red Chile Sauce

  1. In a heavy saucepan, melt the butter.
  2. Add the flour and cook, stirring, until the mixture turns slightly golden.
  3. Remove the pan from the cooking heat and stir in the chile powders.
  4. Stir in the stock.
  5. Continue stirring until the mixture becomes smooth.
  6. Add the garlic, oregano, and cumin and simmer for about 10 minutes.
  7. Taste and adjust the seasonings, adding salt, if desired.
