BBQ Pulled Pork-Topped Sweet Potatoes

  1. Heat oven to 425 degrees F.
  2. Prick potatoes with fork; place on rimmed baking sheet.
  3. Bake 40 to 45 min.
  4. or until tender.
  5. Cook meat and barbecue sauce in saucepan on medium heat 6 to 8 min.
  6. or until heated through, stirring frequently.
  7. Split potatoes.
  8. Serve topped with meat mixture, sour cream and onions.
