Roast Beef Hash
- 3 tbsp Oil
- 2 cup Frozen diced hash browns
- 1/2 cup Diced peppers and onions (frozen or fresh)
- 1 cup Leftover roast beef, diced
- 1 as needed Salt & pepper
- 1 as needed Other spices to your liking: I used smoked garlic and red pepper flakes
- Heat oil in a large skillet over medium heat.
- Add potatoes, pepper, & onions.
- Let cook untouched for about 5 minutes.
- Add roast beef.
- Stir and let cook another 5-10 minutes.
- Flipping over gently once or twice for even browning.
- Serve with eggs fixed your way.
