Green Pea and Quinoa Salad
- 3 cups cooked quinoa, cooled
- 2 cups peas
- 1 cup chopped red radish
- 1 23 cups canned chick-peas, drained and rinsed
- 13 cup buttermilk
- 1 tablespoon olive oil
- 1 tablespoon white wine vinegar
- 12 cup crumbled feta cheese
- 14 cup chopped fresh dill
- salt and pepper
- In a large bowl combine quinoa, peas, radishes and chickpeas.
- In a small bowl, whisk together buttermilk, oil and vinegar.
- Stir in cheese and dill.
- Add to quinoa mixture and toss to coat.
- Season to taste with salt and pepper.
- Cover and refrigerate for 30 minutes.
