Brown Sugar Shortbread

  1. Preheat oven to 350.
  2. Line a cookie sheet with parchment paper and set aside.
  3. (I skipped this step and found it unnecessary.
  4. I just sprayed my pans with nonstick cooking spray.

  6. In a large bowl, beat butter with an electric mixer on medium to high speed for 30 seconds.
  7. Add brown sugar, apple pie spice, and salt.
  8. Beat until combined, scraping side of bowl occasionally.
  9. Gradually beat in as much of the flour as you can with the mixer.
  10. Using a wooden spoon, stir in any remaining flour.
  11. Shape dough into 1 inch balls.
  12. Place balls 2 inches apart on prepared cookie sheet.
  13. Coat the bottom of a cookie stamp with nonstick cooking spray and dip the stamp in granulated sugar.
  14. Flatten each ball of dough, imprinting the pattern.
  15. Bake in a preheated oven for 12 to 15 minutes or until lightly browned.
  16. Transfer cookies to a wire rack and let cool.
