Chicken and Chickpea Salad Pita Sandwiches with Broccoli Sprouts
- 1 cup Chicken Breast, Cooked & Cubed
- 1 can (15 Oz. Size) Chickpeas, Drained, Rinsed
- 1-13 cup Plain Greek Yogurt
- 1 clove Garlic, Minced
- 1 Tablespoon Lemon Juice
- 1/4 cups Chopped Fresh Parsley
- Salt And Pepper, to taste
- 2 whole Pitas
- Broccoli Sprouts, As Desired For Garnish
- Cucumber Slices, As Desired For Garnish
- Red Onion Slices, As Desired For Garnish
- In a large bowl, combine chicken, chickpeas, Greek yogurt, garlic, lemon juice, parsley, salt and pepper.
- Cut a pita in half and take the chicken and chickpea salad and stuff it into the pita.
- Garnish with broccoli sprouts, cucumbers and red onion!
