Polynesian Chicken

  1. Preheat oven to 375 degrees.
  2. Place the thawed chicken in a single layer in a baking pan (I use a 13x9x2 pan) or a casserole dish.
  3. In a bowl, stir together the Russian dressing, peach preserves, and onion soup mix.
  4. Pour the sauce evenly over the chicken.
  5. Cover the dish with foil and bake for 45 minutes or until the chicken is cooked through.
  6. We serve this with Rice a Roni chicken flavored rice, but Im sure white rice would be delicious as well.
  7. Just as long as you have something to soak up all the yummy sauce!
