Banana Cake With Banana-Butter Frosting
- 2 eggs
- 1 14 cups granulated sugar
- 12 cup shortening (I like Crisco)
- 2 very ripe bananas
- 1 cup buttermilk (or use 1 cup milk with 1 t vinegar mixed in and let set for 15 minutes before adding to recipe)
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 12 cup mashed ripe banana
- 1 teaspoon lemon juice
- 14 cup butter
- 3 12 cups sifted confectioners' sugar
- Grease and flour a 9 1/2-inch by 11-inch cake pan.
- Preheat oven to 325 degrees F.
- In large bowl, beat the eggs, sugar, shortening.
- In separate bowl, mash to really ripe bananas and then add to the egg, sugar and shortening mixture.
- Combine the flour with the baking powder.
- Alternately add the buttermilk and flour in with the egg, sugar and shortening mixture; beat until well-blended.
- Pour batter into greased and floured cake pan.
- Bake for 30-35 minutes or until tested done with a toothpick in the center.
- To prepare the frosting: Mix together the banana and lemon juice.
- Beat butter until creamy.
- Add sugar and banana alternately, a small amount at a time, to the butter.
- Beat until frosting is light and fluffy.
- Spread over cooled banana cake.
