Morning Delight Muffins

  1. Preheat oven to 350.
  2. Place 18 muffin cups liners in muffin cups; coat liners with cooking spray.
  3. Lightly spoon flour into dry measuring cups, and level with a knife.
  4. Combine flour and next ingredients (through salt) in a large bowl; stir with a whisk.
  5. Make a well in center of mixture.
  6. Combine yogurt, oil and egg white; add to flour mixture, stirring just until moist.
  7. Fold in blueberries.
  8. Spoon batter into prepared muffin cups.
  9. Sprinkle evenly with flaxseed.
  10. Bake at 350 for 20 minutes.
