Single Person Chicken Soup Recipe
- Buy a lg. chicken (3 to 4 lbs.)
- 2 to 3 average size potatoes
- 2 med. onions
- In large pan, place chicken on rack.
- Put onions and potatoes, quartered around chicken.
- Bake at 325 degrees for 2 hrs.
- Eat what you want of chicken (2 to 3 meals).
- Place carcass in crock pot.
- Dice 2 potatoes and 3 medium onions, 1 package chicken soup starter, fill 3/4 with water.
- Cook for 8 hrs.
