Savory Salmon Asparagus Tart
- 20 stalks asparagus, cut into 3 inch pieces
- 1 refrigerated pie crust
- 8 ounces salmon, flaked (NOT canned)
- 3 eggs
- 23 cup half-and-half
- 2 scallions, chopped
- Preheat oven to 400 degrees.
- Put crust in a large tart pan-be sure it goes up the sides.
- Prick the bottom of the crust with a fork.
- Put asparagus in crust and bake on a baking sheet for 15 minutes.
- Remove from oven and lower temp to 350.
- Add salmon and scallions to shell.
- Arrange asparagus around shell in spokes.
- Mix eggs and cream together and pour into pie shell.
- Bake tart 35 minutes longer until filling sets.
