Chocolate Chip Coconut Crinkles
- 1 cup vegetable oil
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 tsp coconut extract
- 1 tsp baking soda
- 2 eggs
- 2 tbsp cornstarch
- 2 1/2 cup all-purpose flour
- 1 1/2 cup toll house chocolate chips
- Preheat oven to 375F.
- Line cookie sheet with wax paper and set aside.
- In a medium bowl beat together with an electric mixer oil and sugars until creamy.
- Add Coconut extract, baking soda, cornstarch and eggs beating well after each addition.
- Add flour and beat well until combined.
- Stir in chocolate chips.
- Use your hands to form 1 inch balls and place on cookie sheet.
- Bake for 8-9 mins until tops are set and do not over bake.
- Repeat until dough is finished.
