Shrimp Quesadillas

  1. Cut each shrimp into 1/2-inch pieces and place in a large bowl.
  2. Add the chiles and cheese and stir until evenly distributed.
  3. Place a tortilla in a large saute pan over medium-high heat and spread about 3/4 cup of the shrimp mixture over the tortilla.
  4. Top with another tortilla and cook for 2 minutes, or until the cheese begins to melt.
  5. Turn the quesadilla over and cook for 1 minute, or until the cheese is completely melted.
  6. Repeat the process with the remaining ingredients and cut each tortilla into 6 wedges.
  7. Place the wedges on a serving plate and serve warm.
