Shrimp Quesadillas
- 1 pound peeled and deveined cooked shrimp
- 2 (4-ounce) cans diced green chiles
- 4 cups shredded cheddar-Jack cheese
- 12 8-inch flour tortillas
- Cut each shrimp into 1/2-inch pieces and place in a large bowl.
- Add the chiles and cheese and stir until evenly distributed.
- Place a tortilla in a large saute pan over medium-high heat and spread about 3/4 cup of the shrimp mixture over the tortilla.
- Top with another tortilla and cook for 2 minutes, or until the cheese begins to melt.
- Turn the quesadilla over and cook for 1 minute, or until the cheese is completely melted.
- Repeat the process with the remaining ingredients and cut each tortilla into 6 wedges.
- Place the wedges on a serving plate and serve warm.
