Salmon Quiche
- 1 13 cups flour
- 155 g butter
- 1 egg yolk
- water
- 2 tablespoons olive oil
- 250 g salmon
- 3 onions, finely chopped
- 300 g cottage cheese
- 200 g mascarpone
- 180 ml fresh cream
- 4 eggs
- 2 teaspoons oregano
- salt and pepper
- breadcrumbs
- For the pastry make in a crumble the flour salt and butter.
- Then add the egg yolk and water till the mixture become a firm ball.
- Than wrap in cling film and leave to rest for 30 minute.
- Prepare the baking dish by spreading it lightly with butter and cover with breadcrumbs.
- Open the pastry and put it in the dish over the breadcrumbs.
- Put in the fridge for 15min meanwhile make the filling.
- Heat olive oil in a pan and cook the onions and leave aside to cool.
- In a bowl mix the cottage cheese, mascarpone and fresh cream.
- Add salmon and eggs.
- Take out the pastry from the fridge, spread the onions on the pastry and spread the salmon mixture on the onions.
- Bake for 40 minute.
