Herring with Mustard Sauce

  1. Put the herring slices in a small serving bowl.
  2. In another bowl, whisk together the white-wine vinegar, cream, mustard, and sugar.
  3. Gradually whisk in the oil.
  4. Add salt and pepper to taste.
  5. Pour the dressing over the herring, and sprinkle dill on top.
  6. Serve immediately, or refrigerate until serving.
