Herring with Mustard Sauce
- 8 ounces pickled matjes herring, cut into 2-inch slices
- 2 tablespoons white-wine vinegar
- 1 tablespoon sour or heavy cream
- 1 teaspoon Dijon mustard
- 1/2 teaspoon sugar, or to taste
- 4 tablespoons vegetable oil
- Salt and freshly ground pepper to taste
- Chopped fresh dill for garnish
- Put the herring slices in a small serving bowl.
- In another bowl, whisk together the white-wine vinegar, cream, mustard, and sugar.
- Gradually whisk in the oil.
- Add salt and pepper to taste.
- Pour the dressing over the herring, and sprinkle dill on top.
- Serve immediately, or refrigerate until serving.
