Tex-Mex Peachy Pork Picante
- 1 -1 12 lb boneless pork or 1 -1 12 lb boneless chicken breast
- 1 (1 1/4 ounce) package taco seasoning mix
- 1 tablespoon oil (I use canola oil )
- 23 cup peach preserves (sugar free if desirsed )
- 1 (16 ounce) bottlechunky style salsa (mild or hot depending on your taste )
- Cut meat into 3/4 inch pieces and place in zip loc bag.
- Pour taco seasoning in and coat meat well with seasoning.
- Heat oil in a large skillet over medium high heat and brown meat, stirring occasionaly.
- Add salsa and peach preserves to skillet.
- Stir well and lower heat, cover and simmer for 15 to 20 minutes.
