Brie With Sun Dried Tomatoes Belden Recipe
- 1 pound Brie, chilled
- 2 tbsp. chopped fresh parsley leaves
- 2 tbsp. freshly grated Parmesan
- 4 sun-dry tomatoes, packed in oil, liquid removed, reserving 1 tbsp. of the oil and chopped
- 6 cloves garlic, chopped and mashed to a paste
- 1 teaspoon dry basil, crumbled
- Remove the rind from Brie and place on a serving plate.
- In a small bowl combine parsley, Parmesan, tomatoes, garlic and basil.
- Add in the reserved oil and combine the mix well.
- Spread mix over the Brie and let stand for 1 hour before serving.
- Serve with crackers.
- Serves 6-8.
