Potato Cake(Recipe Over 100 Years Old)
- 2 c. sugar
- 1/2 c. butter
- 2 eggs
- 1 c. boiled and mashed red Irish potatoes, cooled
- 2 c. flour
- 1 tsp. cinnamon
- 1 tsp. ground cloves
- 4 sq. unsweetened chocolate, melted and cooled
- 1/2 c. sweet milk
- 1 tsp. nutmeg
- 1 1/2 tsp. baking powder
- 1 c. black walnuts
- Cream together sugar and butter.
- Add eggs; beat well after each addition.
- Add cooled potatoes and chocolate.
- Sift together flour, baking powder and spices.
- Add to cake mixture alternately with milk, beginning and ending with flour.
- Add black walnuts; this helps to make the cake.
- Pour into two 9-inch lightly greased and floured pans and bake at 325u0b0 to 350u0b0 according to your stove. Let cool and frost with Potato Cake Icing.
