Pioneer Woman's Fresh Corn Casserole with Red Peppers and Jalapenos
- 8 each ears of corn
- 2 each red peppers
- 2 each jalepeno peppers
- 1 cup heavy cream
- 1 stick butter (cut in small pieces)
- 1 salt (to taste)
- 1 plenty of pepper (don't go too light)
- Preheat oven to 350F.
- Shave the kernels off each ear.
- Take the back of the knife and run it down the ear extracting the milky juice and stuck kernels.
- Add chopped peppers and chopped jalapenos.
- Add heavy cream, salt and pepper.
- Mix it all together and pour into a 9x13 baking dish and sprinkle the pieces of butter over the top.
- Bake for 30 - 45 or until heated and bubbly throughout.
