Pioneer Woman's Fresh Corn Casserole with Red Peppers and Jalapenos

  1. Preheat oven to 350F.
  2. Shave the kernels off each ear.
  3. Take the back of the knife and run it down the ear extracting the milky juice and stuck kernels.
  4. Add chopped peppers and chopped jalapenos.
  5. Add heavy cream, salt and pepper.
  6. Mix it all together and pour into a 9x13 baking dish and sprinkle the pieces of butter over the top.
  7. Bake for 30 - 45 or until heated and bubbly throughout.
