Roasted Curried Cauliflower

  1. Preheat the oven to 375F.
  2. Coat a rimmed baking sheet with cooking spray.
  3. In a large bowl, stir together the oil, mustard seeds, cumin seeds, curry powder, and salt.
  4. Add the cauliflower, tossing to coat thoroughly with the spice mixture.
  5. Arrange the cauliflower in a single layer on the prepared sheet.
  6. Roast until the florets are browned on bottom and tender when pierced with the tip of a paring knife, about 35 minutes.
  7. Serve hot.
