Mini Cheesecake Cups Recipe
- 2 Packages cream cheese
- 2 Large eggs
- 1 teaspoon vanilla
- 3/4 c. sugar
- 1 tbsp. lemon juice
- 1 box vanilla wafers
- 1 can pie filling (any flavor)
- Beat cream cheese till smooth; add in Large eggs, vanilla, sugar and lemon juice.
- Line mini cupcake pans with paper and place one vanilla wafer on the bottom of each c..
- Fill with cream cheese mix 2/3 and add in a tsp.
- of pie filling on top.
- Bake at 375 degrees for 15 to 20 min.
