Sundae Cake (From Scratch)

  1. Heat oven to 375F.
  2. Combine flour, sugar and baking powder in large mixing bowl.
  3. Add milk, butter, egg and vanilla.
  4. Beat at low speed, scraping bowl often, until well mixed.
  5. Increase speed to medium.
  6. Beat until well mixed.
  7. Stir in 1/2 cup chocolate chips by hand.
  8. Spread batter into greased and floured 8-inch square baking pan.
  9. Sprinkle with peanuts.
  10. Bake for 28-32 minutes or until wooden toothpick inserted in the middle comes out clean.
  11. Cool completely.
  12. Beat chilled whipping cream in chilled small deep mixer bowl at high speed, scraping bowl often, until soft peaks form.Continue beating, gradually adding powdered sugar, until stiff peaks form.
  13. Cut cooled cake into squares.
  14. Place each serving onto individual plates.
  15. Top with fresh fruit and strawberry topping; add dollop of whipped cream and chocolate chips, if desired.
