Diane's Chicken Curry Recipe
- 1/4 c. + 2 tbsp. butter
- 1/2 c. chopped onion
- 1 tbsp. curry pwdr
- 1/4 c. + 2 tbsp. flour
- 1 1/2 teaspoon salt
- 1 1/2 teaspoon sugar
- 1/4 teaspoon grnd ginger
- 2 c. chicken bouillon
- 2 c. lowfat milk
- 4 c. cooked, cut up chicken
- 1 teaspoon lemon juice
- Heat butter over low heat.
- Saute/fry onion and curry pwdr till onion is tender.
- Add in flour, salt, ginger and sugar.
- Cook till smooth and bubbly.
- Remove from heat.
- Add in chicken broth and lowfat milk.
- Bring to boil, stirring constantly.
- Boil about 1 minute.
- Add in chicken and lemon juice and heat through.
- Serve over rice.
- Accompaniment: Chutney, pineapple chunks, peanuts, raisins, coconut, currant jelly.
- Makes 8.
