Chorizo Queso Sliders

  1. Heat gas grill on medium-high or charcoal grill until coals are ash white.
  2. Combine cheese and jalapeno peppers in bowl.
  3. Microwave, stirring every 30 seconds, 2-3 minutes or until melted.
  4. Keep warm; set aside.
  5. Combine chorizo and beef in bowl.
  6. Shape mixture into 8 patties.
  7. Grill patties, turning once, 10-12 minutes or until internal temperature reaches at least 160F and meat is no longer pink in center.
  8. Grill tortillas 1-2 minutes or until grill marks are visible on one side.
  9. Place patties onto ungrilled side of tortillas.
  10. Top each with queso, pico de gallo, lettuce and tortilla strips.
  11. Fold tortilla over filling.
  12. *Substitute 1 (4-ounce) can chopped green chiles.
  13. **Substitute regular-flavored tortilla strips or corn chips.
  14. Tortilla strips are often found in the produce section of the supermarket.
