Pear, Walnut & Blue Cheese Composed Salad

  1. In a small bowl, combine vinegar, honey, salt and pepper.
  2. Slowly drizzle in olive oil, whisking vigorously to emulsify the dressing.
  3. In a medium bowl, combine torn parsley leaves, arugula and about one half, or so, of the dressing (to suit your taste).
  4. Divide the arugula mixture evenly among 4 salad plates.
  5. Top each plate evenly with the sliced pears, walnut halves and crumbled blue cheese.
  6. Drizzle 1 tablespoon, or so, of the remaining dressing on each plate.
