Asian Stew
- 5 cups vegetable stock
- 1 small onion, diced
- 2 garlic cloves, minced
- 2 tablespoons soy sauce
- 14 cup spinach, chopped
- 1 cup broccoli floret
- 1 cup carrot, diced
- 1 cup mushroom, sliced
- 12 cup peas
- 12 cup water chestnut, chopped
- 12 cup soba noodles, broken
- 12 cup tofu, cubed
- brown onions and garlic in large pot.
- Add stock and soy sauce and bring to a boil.
- Add remaining vegetables and bring to a simmer.
