Pecan Muffins
- 1 1/2 cups wholemeal SR flour
- 1 1/4 cups SR flour
- 1 cup pecan
- 1 cup milk
- 1 cup oil
- 1/2 cup honey
- 1 1/2 tablespoons VEGEMITE
- 1 egg, lightly beaten
- butter, for spreading
- SIFT the flours together into a large bowl.
- Stir in 3/4 of the pecan nuts.
- BEAT together the milk, oil, honey, VEGEMITE and egg.
- Add to the flour and briefly mix.
- Spoon into 12 x 1/3 cup greased muffin pans.
- Sprinkle with remaining pecans.
- BAKE in a hot oven 200 degrees C for 20 minutes or until cooked.
- Cool slightly before turning out.
- Serve warm with butter.
