Pan Roasted Pork Loin with Bourbon-Paprika and Mustard Brine

  1. Preheat oven to 400 degrees.
  2. In a shallow bowl, mix together all ingredients.
  3. Add the pork loin and let marinate overnight.
  4. Transfer the pork to a hot heavy-bottomed skillet and saute until browned, about 5 minutes.
  5. Transfer the pan to oven and finish cooking for 4 minutes.
  6. Serve with vinegar based cole slaw or honey mustard and crusty rolls.
