Avocado Corn Salsa
- 1 package Frozen Corn (10 Oz), Thawed
- 1 can Diced Green Chiles (4 Oz)
- 4 whole Plum Tomatoes, Diced
- 2 whole Ripe Avocados, Peeled, Pitted And Diced
- 1/2 cups Red Onion, Diced
- 1/4 cups Fresh Cilantro, Chopped
- 1 whole Lime, Zest And Juice
- 2 Tablespoons Olive Oil
- 1/2 teaspoons Sugar
- Kosher Salt And Freshly Ground Black Pepper, To Taste
- Combine corn, chiles, tomatoes, avocados, red onion, and cilantro in a medium bowl.
- Combine lime juice, zest, olive oil, sugar, salt and pepper in a small bowl and then toss it with the avocado mixture.
- Serve promptly.
